Crispy Smashed Potatoes with Fresh Thyme

There are a plethora of different potatoes to choose from when making a potato for a side. In this recipe we will use mini red potatoes. These are one of my favorite types of potatoes. They originate from the mountains of Peru, and were brought to Europe in the 1560's by Spanish explorers. These potatoes eventually made their way to the United States and are very common and can be found in almost any grocery store!

Red potatoes are fairly healthy due to their thin skin which is full of fiber, iron, potassium, and vitamins B & C! Nearly half the fiber in these potatoes can be found in the skin alone. Sometimes potatoes have thick skins that can be hard to eat, but these red potatoes have a perfect layer of skin that is not too thick and not too thin. It crisps right up in the oven and tastes amazing!
I love this smashed potato recipe in particular because it allows for a crispy outside and a soft inside. The seasoning from the spices and oils is very flavorful and can be noticed in every bite.
